food made for friends

our food brings people together

The vegans. The hunters. Your hungover brother. Your dad who hates vegetables. We’ve saved a seat for anyone who loves great food - not just great vegan food. We’re not a food truck or a restaurant (yet) but perhaps the next best thing. Through catered pop-ups and plated dinners, our veg-forward meals bring everyone just a little bit closer.

FOOD FOR THOUGHT

eating your vegetables makes you objectively cuter

we want to cater to you

Dinner for forty? Or four hundred? Our catering books are open through 2024 for cocktail hours, buffets, family style, and plated dinner experiences. We've built out our catering program to include a talented team of industry professionals for any size event. We provide locally sourced, seasonal menu options to satisfy omnivores and herbivores alike.
PLEASE NOTE: Our wedding books are now closed for 2024. We have limited availability for other events. Please inquire below.

about the crew

Owners Alexi Mandolini & Taylor Herbert have a combined 28 years in the service industry and, after losing work due to the pandemic, they started The Easy Vegan as a twice-weekly restaurant pop-up in the university neighborhood of Denver. Now you can find them all over Denver serving everything from fun and unpretentious street food to thoughtful, farm-to-table plated food and drink experiences.

AS SEEN IN

All bites. No barks.

Our sister brand Other Dog will be joining Denver’s vegan community in spring ‘24. (Disclaimer: No dogs were used in the making of these dogs)
